Our Vision
At HELYX™ Restaurant, we believe that dining is more than just a meal, it's an experience. Our Vision was to create a space where our guests can escape the hustle and bustle of everyday life and indulge in a sensory journey of taste, aroma and ambience. Our name's inspiration, the helix (or spiral), is not only the best tool for opening a Bottle of Wine, it is also a symbol of resilience and is found throughout nature. We find the helix in galaxies, weather patterns and in every living organism’s DNA. Because of its stability and anatomy, the helix has withstood the test of time, and in this tradition, as the Try Wine Company celebrated its 10th Anniversary in St Pete, we launched our newest Culinary Venture, HELYX™ Restaurant, located inside the TRY WINE® Experience, DRINK+DINE+SHOP.

Our Wine
As HELYX™ at TRY WINE®, we are able to source our Wines from one of the Largest Wine Collections in St. Petersburg, the Cellar at TRY WINE®. Established in 2014, TRY WINE® is now the Oldest Wine Bar Restaurant in St Petersburg, and with that has grown its Wine Collection to well over 1000 Bottles of Premier Wines from around the Globe. HELIX™ enjoys the unique ability to Select some of the Jewels of the Cellar to pair perfectly with our Multi-Course Experiences.

Our Chef/Owner
After a lifetime of exploring and experiencing the best in Culinary and Wine from around the World, and with a burning passion for both, Oliver founded TRY WINE® in 2014 and embarked on an even deeper journey. As the creative force behind the development and direction of TRY WINE®, over the last 10 years Oliver has carefully crafted both our Wine Collection and Culinary Program, including the creation of HELYX™, our most highly elevated Multi-Course FOOD+WINE Experience. Exceptional! We tried the New Helyx 6 course dinning experience, and it was truly one of my favorite food experiences here in our city! The chefs food creations with attention to the layer of taste and detail of flavors, edible flowers, marinations and spices is the next level! You must do the wine pairing as well, the wine they pair with the courses is a true match, truly complementing each course! The final desert course made by the pastry chef is divine, the perfect amount of sweetness to end the meal. 10/10 highly recommended!
